Glass Noodles ~ Shiitake Mushroom ~ Burnt Garlic ~ Coriander ~ Seaweed
This is my comfort Noodle Soup for a rainy day.
Serves 4
Ingredients
3-4 Shiitake Mushrooms (Dried or Fresh), finely sliced
40 gms Glass Noodle, cooked and kept aside (takes 10 mins)
2 Cups Vegetable stock or 1 Cube dissolved in 2-3 cups of water
12 Garlic Cloves, deep fried till golden brown
2 Onions, finely slices and deep fried till golden brown
Half a Sheet of Seaweed, stripped
Handful of Coriander
Sesame Oil (optional)
Method
Keep all ingredients ready as mentioned above, prepped. Take a large cauldron and add the stock water and shiitake, bring to a boil. Add the seaweed and noodles and allow to simmer for 10 -12 mins.
Turn the stove off and serve with a garnish of fried onions, garlic, a drizzle of sesame oil and some coriander.
Add salt accordingly.
