Shakshuka (The Drunken Pig Version)

Ingredients (serves 2)

4 Eggs

2 Tomatoes diced

2 - 4 Chicken or Pork Sausages sliced. You can alternatively or additionally add Salami or Bacon, if you wish

Pepper

Salt

Oregano

1 Capsicum (green bell pepper chopped in small cubes)

1 Onion (chopped into small pieces)

2 tbsps Jalepenos or/ and olives (chopped in a half)

2 tbsps Olive oil

1 tsp Garlic chopped

Few Basil leaves


Method

In a large skillet pan, add a 1 tbsp oil, on medium flame. Then the onion, pinch of pepper and oregano. Once the onions are browning evenly, add the garlic and tomatoes. Put on low flame now, and wait for the tomatoes to become a mash. Then add the sausages, a pinch of salt & pepper, and keep stirring the mixture. You may add water to help loosen the tomato mixture and keep it from burning.


Once you have a sauce like consistency, add the the capsicum and jalapenos. Mix again, a minute. Feel free to add the oil, as and when needed only.


Clear 4 spaces in the skillet pan, to pour in the eggs. Break the eggs in those spaces and cover with a lid. Make sure its on low flame. After a minute, add basil leaves and oregano on top before serving.
