Seer Fish Wrapped in a Banana Leaf (with Raw Mango and Coconut Milk)

Ingredients:


7-8 pieces seer fish (King Mackarel)

1 Tsp Salt

1 Tsp Pepper

2 Tsps Lemon Juice


1 Tsp Chili Powder

1 Tsp Pepper

1 Tsp Mustard seeds

1 Tbsps Coconut Oil

1 Cup Raw Mango chopped in small cubes

2 Stalks of Curry leaves

2 Cups Coconut Milk

2 Tsp White Vinegar (Optional)


Method:

Clean the fish and marinate with salt pepper and lemon juice. Keep aside.


Now take a plate and mix, chili powder, pepper, mustard seeds and coconut oil. Coat fish with this one at a time on both sides so that the spice mix is evenly spread.


Take a steaming dish and place the banana leaf in it. make sure the dish is like a baking dish closed on four sides and only open from the top.




Now place the fish either each banana leaf wrapping one fish or all the seer fish pieces in a large leaf. Top this fish with the mangoes and curry leaves. Pour the coconut milk over the fish and some in the dish to keep the dish and leaf moist.



Now close the banana leaf and allow the fish to steam for 15 mins.


The idea is to allow the fish to cook in the coconut milk fill in the steaming dish. In case you are using one banana leaf per fish. Place a few pieces of mango and curry leaves in each packed banana leaf parcel, close the fish in it and place in the dish all the parcels together, then pour the coconut milk over it. This will also allow it to soak in the marinade fully.



Remove and serve with Appam or Steamed Rice.
