Rice Flat Noodle Stir-Fry (Vegetarian)

Serves 4


Ingredients

40-50 gms Rice Flat Noodle

1 Tbsp Sesame Oil

2 Spring Onions, chopped

1 Packet Tofu (12-15 cubes)

2 Carrots, sliced round and thin

Half and Onion, sliced thin

3-4 Garlic Cloves, finely chopped

1 Tbsp Fish Sauce (optional)

1 Tbsp Light Soya Sauce

Salt to taste

1 -2 Cups Water to cook noodles (add according to method)


Method

Soak the rice noodles in room temperature water for 12 mins.

Meanwhile, heat a tsp of sesame oil in a large pan, once heated, add the chopped garlic and onion, and saute till golden. Add the carrots and stir fry for 3-4 minutes.


Now add the noodles, tofu and the sauces. Keep stirring gently on low flame till the noodles are moist and softer. Add half a cup of water and allow to simmer on low heat. Cover for 2-3 mins.


Remove lid and check if the noodles have cooked, if not add another quarter cup of water and cover. Once cooked the noodles will be whiter in colour and extremely soft to break.


Turn stove off and drizzle the remaining sesame oil and mix. Use tongs to mix gently so that the oil blends well between the noodles and the noodles don't stick together.


Seve with chili oil, paste or any side dish like dumplings.
