Korean Ginger Cinnamon Tea (Sujeonggwa)

This is a great immunity booster, and can be served hot or cold. It is not only an effective digestive but the flavour lightens the stomach after a heavy meal. The flavours are fruity and delicious and is good for the throat if taken hot.


Yeild: 1 Ltr Cinnamon Tea


Ingredients:

1/2 Cup Sliced Ginger

1 Cup Brown Sugar (add more only if needed)

10 Cinnamon Sticks, which can be used later as well after making the tea

4 Dried Persimmon (Optional)

1 Tbsp Pine nuts for garnish

1.1 Ltr Water

Method:

Boil the water in a large vessel, then turn to low heat and add all the ingredients listed above (except for the pine nuts).


Allow the tea to simmer on low flame. Cover the vessel and allow it to brew for 1 hour. Keep stirring every 5-10 minutes.


After 30 mins, check for sweetness and taste. Add ginger, cinnamon or sweet accordingly depending on what you prefer. Let it continue to brew for the remaining 30 mins.


Turn of the stove and serve immediately with a sprinkle of pine nuts. If you prefer to serve it cold, all it to cool and refrigerate in a bottle. Consume accordingly.


Please do not add additional water, ice. Also avoid adding substitutes for the fresh ingredients such as Cinnamon powders etc as it will not give you the desired taste.
