This is special to us as it is a family recipe from Dad. He concocted this years ago probably when we were kids, he made scrambled eggs for Mum as she doesn't eat the yolk by itself (as I have also come to dislike), unless it is scrambled or made into an omelet. This recipe is his baby, not even evolved over the years. Just the same scrambled eggs recipe that he made with love. We love spicy food, all of us have a high tolerance for it, this recipe has a lot of pepper and green chilies so make it if you love it spicy!
Serves 1 or 2
Ingredients
2 Eggs, beaten lightly
2 Green Chilies, finely chopped
2-3 Tsps Pepper, minimun 2
1 Onion, finely chopped
Salt to Taste
2 Tsps Oil
Method
Take a skillet and add a teaspoon of oil, allow to heat for 30 seconds before adding the onions. Fry the onion till they are golden. To do this keep on low to medium flame and keep stirring at regular intervals. Once they are golden, add the chilies and saute them together till golden brown. Add the salt and pepper and mix well. Now add another teaspoon of oil before adding the eggs
Beat the eggs lightly. You can also break the eggs into the pan directly. Pour in the egg mixture into the skillet with onions and chilies and turn the heat up, fry the eggs gently by stirring the mixture with the spatula. Serve with anything, but tastes best with Chapati, Roti
